Shawn Banks from Century Harvest Farms makes an after school snack of fresh-baked granola
1 cup dry raw Quinoa
4 cups “Old Fashioned” Rolled Oats
1/2 cup Sliced Raw Almonds
1/2 cup Pecan Pieces
1/3 cup Sorghum
1/2 cup Cane or Granulated Sugar
1/4 cup Canola or Olive Oil
1t Vanilla Extract
1t Fine Salt
1/2t Ground Cinnamon
1/2t Ground Nutmeg
1/2t Ground Ginger
1c Dried Cranberries
Directions:
*Preheat oven to 350F.
*Toss well together in a mixing bowl the Quinoa, Oats, and both Nuts.
*Stir well together the Sorghum, Sugar, Oil, Vanilla, Salt and Spices. Toss this mixture with the Oat mixture until evenly coated.
*Pour out mixture onto a parchment-lined baking sheet and bake at 350F, removing and stirring granola every 20 minutes, until evenly toasted and golden brown all over.
*Remove from oven and stir in Cranberries. Let cool completely, toss lightly to break up any clumps, and store in an airtight container.
*Last up to 3 weeks.
